Bruchetta

Mix together
3 vine ripened tomatoes, diced
2 tbsp finely diced red onion
1 tbsp virgin olive oil
balsamic vinegar
1/2 cup basil leaves

spray or paint
1 small loaf sourdough cut into 1cm slices - or a french stick
with olive oil and
1 clove garlic peeled

put in the oven or fry in the pan until toasty
top with mixture and serve quick :)
